Certificate II in Culinary Arts
Duration: 6 months + 200 Internship Hours (Minimum)
Develops the knowledge, skills and attitude of participants on food preparation. It covers competencies such as cleaning kitchen areas, cooking hot and cold meals, and preparing portioned and plated food to guests.
Certificate II in Food & Beverage
Duration: 3 Months + 200 Internship Hours (Minimum)
Develops the knowledge, skills and attitude of participants on food and drinks preparation and service. It covers competencies such as providing a link between kitchen and service area, and Food and Drink industry updates.
Certificate II in Front Office
Duration: 3 Months + 200 Internship Hours (Minimum)
Develops the knowledge, skills and attitude of participants in accordance with industry standards. It covers basic, common and specialized (core) competencies such as receiving and processing reservations, and operating computerized reservation systems.
Certificate II in Accommodation Services (Housekeeping)
Duration: 3 Months + 200 Internship Hours (Minimum)
Develops the knowledge, skills and attitude of participants in providing accommodation services. It covers competencies such as providing housekeeping services to guests, preparing rooms, cleaning premises, valet services, and laundering linen and guest clothes.
Certificate II in Bread and Pastry
Duration: 3 Months + 200 Internship Hours (Minimum)
Equips participants with knowledge, skills and attitude to safely and creatively prepare pastry and bakery products; and present and serve plated and portioned desserts and petits fours for guests.
Certificate III in Food and Beverage
Duration: 3 Months + 200 Internship Hours (Minimum)
Enhances knowledge, skills, behavior and motivation of participants in accordance with industry standards, covering basic, common and core competencies such as providing specialist advice on food or wine, and serving espresso coffee.
Certificate III in Culinary Arts:
Advanced Commercial Cooking
Duration: 6 months + 200 Internship Hours (Minimum)
Enhances competencies that participants must achieve to plan, prepare, and present various hot and cold products, and manage a team of cooks in accordance with industry standards.
Certificate III in Accommodation Services*
Duration: 3 Months + 200 Internship Hours (Minimum)
Enhances competencies that participants must achieve to supervise maintenance and cleanliness of guest rooms, floors and public areas of establishments. It covers competencies such as planning and scheduling routine maintenance and repairs, implementing emergency procedures, storing valuable items, and monitoring people.

Diploma of Hospitality Management in Kitchen Operations*
(National Certificate in Commercial Cooking)
Duration: 1 year (including internship)
Focuses on professional development that includes practices in management and leadership in the kitchen. It is for professionals who want to progress onto becoming a restaurant owner/sous chef/chef de cuisine of different establishments in the hospitality industry.
